The 2017 Ribolla has an irresistibly savory and spicy bouquet reminding me of a citrus-tinged souffle and ginger-spiced green apples encased in a cloud of crushed stone. It enters the palate with grace and finesse with tart orchard fruits and sour melon as tropical florals amass toward the close. This tapers off long with a bitter twang and leaves the palate dry yet still feeling refreshed. The 2017 could use a little more time to fully come around.
