The 2020 Savagnin Cuvée du Professeur is slightly different as it matured in a 4500-liter Alsatian foudre from Zind-Humbrecht with full lees and no bâtonnage. The wine comes from one of the best terroirs in Château Chalon Sous-Roche a very iconic place where you also have a picturesque view of the rock. It's very clean and elegant with some spiciness (it gets into the wine no matter how often you top up François told me) a little curry licorice and aromatic herbs. It has a moderate 12.5% alcohol with great freshness and a very tasty salty finish. Superb again. 6000 bottles were filled in January 2024. Luis Gutiérrez
