From a 1918-planted vineyard near Los Angeles this is fermented and aged in sherry barrels from Ramiro Ibanez and these aren?t topped up for 6 months to allow flor to grow. The result is a remarkable wine with a tangy savoury nose showing oyster shell pear and spicy apple. The palate is lively and mineral tangy and vital with a fine spiciness and a lovely tension

The 2021 Palomino Lopez Vineyard is an unusual oxidatively styled wine made in the style of Sherry though without fortification. One-third of the Palomino received two weeks of skin contact and the final blend was matured in Manzanilla barrels without topping for the first six months where the wine developed a layer of yeast. It has a tawny color and wild character offering aromas of brioche bruised apple and lemon peel with briny nutty undertones. The medium-bodied palate's weight and grip are countered by focused tangy acidity and it has an appealing salty finish. Reminiscent of Fino without the higher alcohol content this Palomino will pair very widely at the table.
