The Guillemot family only produced one barrel of their 2021 Savigny-lès-Beaune 1er Cru Les Jarrons so this note will be of largely academic interest. Revealing notes of plums peonies orange zest spices and smoke it's medium to full-bodied ample and fleshy with melting tannins and a delicate pretty profile.
Lively mid purple. A floral nose with some cherry fruit peeping out. A little more sensuality after the firmer Narbantons. The Jarrons shows a lovely mouth-filling gentle and gracious red fruit, less about structure but with more sensuality at the end. It is usually the other way round between these two vineyards, but the fruit seems to have ripened more satisfactorily in Jarrons in 2021. Drink from 2025-2028.
From the same side but above Narbantons this is connected to the better-known Les Dominodes. This vineyard can be sold under either name (Jarrons/Dominode) but the Guillemot estate chose the original and more correct Jarrons. The wine is deep and elegant fresh vivid and with some intense tension to the lush fruit.
